I think Fourier Transforms are most cool.  A bit of math changes the representation of a signal from frequency to time, and vice-versa.

I was also fascinated with information theory.  How they devised the concept of a bit and used it to measure how much information it took to represent a character, a word, a book, or all knowledge.
